Ingredients:
6 hard-boiled eggs, cut in half
¾ cup (175 mL) avocado, mashed
2 tbsp (30 mL) green onion, thinly sliced
1 tbsp (15 mL) cilantro, chopped fine
1 tbsp (15 mL) lime juice
1 tsp (5 mL) garlic, finely minced
½ tsp (2.5) chili powder
Pinch paprika
Directions:
- Remove the cooked yolks from the hard-boiled eggs and place into a medium size bowl.
- Add, avocado and fold into yolks.
- Add, the remaining ingredients and mash together with a fork.
- Place the mixture into the egg white halves.
- Sprinkle with paprika.
