Wholesome Eggness

The combination of whole grains and fruit topped with a dose of protein from eggs. This recipe is another option you may try for breakfast. This can also be cooked ahead and simply warmed up in the morning.

Adding egg whites or whole eggs (if you believe in eating whole), will add protein to your meal which means you will feel full for longer. The fruit and grains will add complex carbohydrates, and fibre we need for proper digestion and energy levels throughout the day.

Ingredients:

  • 3 Egg Whites
  • 1/4 cup Grain of your choice, Uncooked
    (I used one part basmati rice and one part buckwheat)
  • ½ Apple
  • 1-2 cups Nut Milk (I used Almond Milk)
  • 1-2 TSP Cinnamon
  • Pinch of Sea Salt
  • Berries, Fresh or Frozen

Directions:

Bring 2 cups of water to a boil. Add the rice and let cook at medium low for about 20 minutes. Add the buckwheat and cook for another 10 min. Cover and let sit for 5 minutes. Drain all water and place the grains in a bowl.

Warm up the pan at medium high, add the egg whites and mix well. Cook for 1-2 minutes; add over the grains. Add the milk and all other ingredients, and voila…
