The Reinvented Pancake

What I love most about this “Pancake” is that it was inspired by someone very special to me. It started with a few ingredients and now it has become, well, perfection. I have this for breakfast every morning without the guilt. It is gluten free (gluten free oats), sugar free, chemical and filler free, and diary free. All allergens have been removed to enhance and promote harmony within the body.

Oats are an amazing source of fibre, most B vitamins, a great source of iron, magnesium, phosphorous, and manganese. Magnesium plays a key role in the energy production and functioning of the muscles, arteries and heart; Phosphorus is important in the formation of bones and teeth.

Flax seeds are a great source of polyunsaturated fats (PUFAs) specifically a good dose of omega-3 which is loved by the brain, an anti-inflammatory and antioxidant.

Even though it is not a typical pancake this creation is delicious and most of all really good for you, and who says that typical is great or delicious? Someone once said “Life is too short for average food” I think this is true. The body is the only place we actually live in.

Ingredients:

  • ⅓ C Oats
  • 1 TBS Ground Flax Seeds
  • ¼ C Nut Milk or Water
  • 1 Egg, Free Run
  • 2-3 Egg Whites
  • ¼ C Blueberries, Fresh or Frozen
  • 1 Banana
  • Coconut, Slices or Shredded
  • 1 Tsp Coconut Oil

Directions:

  • Place oats and milk/water in a bowl and microwave for 3.5 minutes (oats should be cooked well).
  • Remove from the microwave and add the egg, egg whites, ground flax and mix well.
  • Continue by adding a mashed banana, blueberries, and shredded coconut.
  • In a non-stick pan add the coconut oil and let it warm over medium low heat for about 20 seconds.
  • Add your pancake mixture and cover; let cook for 10-15 minutes.
  • If you used one egg for your mix, you will need to use a plate (instead of a spatula) to turn it over by simply sliding the cooked side onto the plate, then placing the pan over the pancake and flipping it over so that the uncooked side is on the pan – from my experience using a spatula will cause the pancake to break. If you used two eggs, then you will be able to use a spatula to flip the pancake. This is easy and that is why I call it THE pancake.
