Flourless Brownie

Black Beans are high in fibre and amino acids. With high amounts of minerals and vitamins, it is one food you should consider adding to your diet. I have experimented in the kitchen with this bean for some time now, but instead of making the usual beans and grains, or beans and squash, I decided to add cocoa powder and some coconut sugar. I was pleasantly surprised to discover that it tastes just like chocolate.

If you are fitness enthusiast or simply want to try new ways to eat better, I highly recommend you try this. Black beans are known for the high amino acid content, high fibre and mineral profile. Unlike wheat flour, which contains high amounts of gluten, beans are anti-inflammatory and will not create distress to your digestive system, unless there is a pre-existing condition that may require you to abstain from beans.

These guilt free chocolate flourless brownies are delicious and a great treat for everyone in your family, and you can have them any time.

Ingredients:

  • 1 c Organic Black Beans (small can, rinsed and drained)
  • 2 TBS Raw Unpasteurized Honey
  • 3 TBS Coconut Sugar
  • 4 TBS Organic Unsweetened Cocoa Powder
  • 1 TBS Organic Virgin Coconut Oil
  • 1 TSP Vanilla Bean Extract
  • 2 TSP Baking Powder
  • 2 Free Range Eggs

Serves 9| Per Serving: Calories 105 | Carbohydrates 18| Fat 3| Protein 4| Sugar 9|

Directions:

Preheat oven to 350 F. Put all ingredients in a food processor except the coconut oil. Place the coconut oil in a microwaveable container and warm until liquid. Pour the melted oil over all other ingredients. Cover and mix until smooth. Taste for sweetness and add more honey or coconut sugar if desired.

I used silicone muffin tins and lined with non-stick paper. Distribute the mixture into muffin tins and bake for 30 minutes. Remove and let cool for 10 minutes before serving.
