Coconut Creamsicle

Ice cream and summer just seem to fit together. There is nothing better than a sweet, cold treat on a summer evening! The good news is that there are ways to enjoy these cold treats, like ice cream or popsicles, without completely overindulging. Keep your freezer stocked with some frozen fruit and the rest is easy.

If you love ice cream and coconut, give this super simple and tasty ‘creamsicle’ recipe a try!

What you need:

Popsicle molds can be found at the grocery stores or dollar stores. I picked up BPA free ones at my local Dollarama.

Ingredients:

  • 1 cup coconut milk
  • 1 cup frozen mango
  • 1 ½ cups frozen pineapple
  • 1/3 cup shredded coconut

Directions:

Mix coconut milk, frozen mango, and pineapple together in blender.

Blend until smooth. If it appears too thick, add a splash of water or more coconut milk and blend.

Once blended, add in shredded coconut and mix together with a spoon.

Pour into freezable molds and freeze for 3-4 hours, or overnight.
