Beet and Black Bean Burgers

Makes 12 Burgers

Prep time: 10 minutes + 1-2 hours to chill

Cook time: 10 minutes

Ingredients:

1 can black beans, drained and rinsed

2 medium beets, washed and peeled

2 cups quick oats

1/2 cup minced onion

4 cloves minced garlic

1 tbsp ground cumin

Salt and pepper to taste

Directions:

  • Using the shredding attachment on a food processor, grate the beets. Add the black beans, onion, garlic and seasonings and pulse until thoroughly mixed.
  • Add the oats 1/2 cup at a time, mixing between each addition
  • Chill mixture in the fridge for 1-2 hours. Shape into 12 burger patties.
  • Cook burgers on foil-lined grill five minutes per side until heated through.

Serve on a whole grain bun with your favourite burger toppings!
