Apple Pumpkin

I love fall, especially the different shades of orange, red, and brown. I love the crisp air. It usually indicates that winter is on its way and we also tend to spend more time indoors with family and friends. All this is better when you have yummy treats to share with the loved ones, that are also nutrient dense and nourish not only the body, but the soul too.

It is packed with fibre which means you will eat less and feel full faster. The cinnamon will balance your blood sugar levels and the flax seeds are very beneficial to your hormone health.

This delicious Apple Pumpkin treat is heaven.

Ingredients:

  • 1 ¾ C Oat Flour or any Gluten Free Flour
  • ¼ C Nut Free Milk (coconut, almond, soy)
  • 2 Apples, Chopped
  • 1 ¾ C Pumpkin Puree
  • 5 TBS Coconut Sugar
  • ¼ C Almonds, Chopped
  • ½ Tsp Baking Powder
  • 1 Tsp Cinnamon
  • 1 Tsp Vanilla Bean
  • 3 TBS Coconut Oil
  • 2 TBS Flax Seeds, Ground

Directions:

Pre-heat the oven to 350ºF. Mix well all ingredients in a bowl and set aside some of the coconut oil. Use the coconut oil to coat an eight inch baking dish. Place the mixture in the dish and set in the oven to bake for 60 minutes or until lightly brown. It smells and it tastes delicious, so enjoy!
